If Business is unavailable to you, then Pork Belly is an acceptable substitute, just make sure to leave the skin on.

Preheat oven to 270 degrees.

Pat Business dry with a paper towel, coat lightly with oil of your choice (olive oil recommended), season generously with salt, pepper, paprika, chili powder. Dice 1-3 bulbs of garlic and rub on Business. If cooking with Pork Belly, then add an extra layer of salt to the skin at this time.

Put Business in oven on baking tray for 2.5-3.5 hours. If cooking with Pork Belly, then wrap it in foil while leaving the skin exposed and place in oven skin facing upwards. Longer cooking time will result in more tenderness.

After slow roasting is complete, then increase temperature to 425 degrees. If cooking with Pork Belly, then unwrap before increasing temperature. Baking tray is optional for this step.

Bake at 425 degrees for 20-40 minutes.

Let stand for 5 minutes, then enjoy.
